FONTAINEBLEAU LAS VEGAS ANNOUNCES OPENING OF LA CÔTE, A POOLSIDE DINING DESTINATION WITH FRENCH RIVIERA ROOTS

LAS VEGAS (April 16, 2024) – La Côte, a poolside dining destination reminiscent of French Riviera’s seaside restaurants, is now open at Fontainebleau Las Vegas. Located on the resort’s third floor, six-acre Oasis Pool Deck, La Côte is currently open exclusively to Fontainebleau Las Vegas hotel guests.     

A sister restaurant to its Fontainebleau Miami Beach counterpart, La Côte provides the perfect setting for bon vivants to live in the moment and embrace the joie de vivre, with a menu of fresh French-Mediterranean fare alongside an expansive rosé and cocktail program. Designed by Jeffrey Beers International, the restaurant features light oak accents and palladiana flooring, sinuous shapes, casual seating and lounge areas, and an inviting patio for guests to gather and enjoy the epitome of poolside sophistication.

The menu, curated by Executive Chef Francisco Campa Fuentes, serves up both breakfast and lunch with Chilaquiles con HuevoEgg White FrittataWhole Grilled Branzino8 oz Marinated Skirt Steak, and Florida Lobster Quesadilla among the standouts. The dessert selections include a showstopping half-pineapple filled with mango and coconut sorbet served over a bed of ice and edible flowers. 

“La Côte brings a new dimension to poolside dining, reflecting its French-Mediterranean roots and perfectly complementing the restaurant collection we have curated at Fontainebleau Las Vegas,” says Senior Vice President of Food and Beverage Anthony Olheiser. “Chef Fuentes is raising the bar for gastronomic creativity in a unique, poolside luxury setting, and we can’t wait for guests to experience this culinary journey.”

Drawing inspiration from the French-Mediterranean social lifestyle, La Côte also boasts a selection of 120 wines with an emphasis on the beloved roséand French favorites. La Côte Piscine, one of La Côte’s signature cocktails, leans into Cote D’Azur tradition with a glass of Whispering Angel rose mixed with Giffard Lichi-li and garnished with a generous scoop of fresh, mixed berries. The restaurant also touts a well-rounded spritz program with creative and refreshing libations like the Goldfinger, made with Remy VSOP cognac, Lustau Manzanilla sherry, fresh lemon and pineapple juice, muddled blueberries, agave syrup, cava and topped with a splash of club soda; and Leading Lady made with Mount Gay Eclipse rum, Cocchi Americano vermouth, fresh lime juice, muddled strawberries, and simple syrup, topped off with cava. 

Now open to hotel guests, Oasis Pool Deck boasts seven distinct pool experiences, four bars, daylife destination LIV Beach, a 2,300 square-foot gaming area and poolside dining destination, La Côte. Drawing inspiration from the work of iconic mid-century landscape designer Roberto Burle Marx, society photographer Slim Aarons and the classic mid-century modern architectural style known as “Googie,” Oasis seamlessly blends classic style elements with modern luxury.      

Open daily from 9 a.m. to 5 p.m., La Côte features a private dining room for up to 12, and can accommodate up to 270 for a full-venue buyout. Group dining requests can be made here
